Description

A vibrant and flavorful Mediterranean Orzo Pasta Salad, perfect for gatherings or a cozy dinner, celebrating fresh vegetables, feta cheese, and olives.

Ingredients

Scale
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • ½ cup Kalamata olives, pitted and sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook orzo according to package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, olives, feta cheese, parsley, and basil.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. Once the orzo cools, add it to the vegetable mixture.
  5. Pour the dressing over the salad. Toss everything gently to combine, ensuring the dressing evenly coats the ingredients.

Notes

Let the salad chill for at least 30 minutes before serving for the best flavors.
