For the cheese bomb layer:

    • 8 oz cream cheese, softened
    • 2 cups Mexican cheese blend, divided
    • 1 cup pepper jack cheese, shredded
    • 1/2 cup sour cream
    • 1/4 cup chopped fresh cilantro

For the topping:

  • 1 cup crushed tortilla chips
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup sliced black olives
  • 2 green onions, thinly sliced
  • 1 avocado, diced
  • Extra sour cream for serving

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Brown ground beef in a large skillet over medium-high heat. Add onion and peppers, cook until softened.
  3. Add garlic and seasonings, then mix in beans, tomatoes, and chilies. Simmer 5-7 minutes.
  4. Combine cream cheese, 1 cup Mexican cheese blend, pepper jack, sour cream, and cilantro in a bowl.
  5. Layer half the meat mixture in baking dish, top with dollops of cheese mixture.
  6. Repeat layers, finishing with remaining cheeses and tortilla chips.
