Ingredients

- 2 cups cooked chicken, shredded
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 cup salsa
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, half of the cheese, taco seasoning, and salsa.
- Mix until well combined.
- Grease a 9×13 inch baking dish with olive oil.
- Pour the chicken mixture into the dish and spread evenly.
- Top with the remaining cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving. Enjoy!
Notes
For added crunch, consider toasting tortilla chips and adding them on top before the last few minutes of baking.
