Mexican Chicken Casserole

Description

A comforting Mexican chicken casserole packed with layers of flavor, perfect for busy nights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup salsa
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, half of the cheese, taco seasoning, and salsa.
  3. Mix until well combined.
  4. Grease a 9×13 inch baking dish with olive oil.
  5. Pour the chicken mixture into the dish and spread evenly.
  6. Top with the remaining cheese.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  8. Let cool for a few minutes before serving. Enjoy!

Notes

For added crunch, consider toasting tortilla chips and adding them on top before the last few minutes of baking.
