Description

A delicious and comforting Mexican chopped cheese sandwich filled with ground beef, fresh vegetables, and melted cheese.


Ingredients

  • 2 sandwich rolls
  • 1/2 lb ground beef
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup salsa
  • Salt and pepper to taste
  • Butter for toasting

Instructions

  1. In a skillet, cook the ground beef over medium heat until browned. Add the chopped onions and bell peppers, cooking until softened.
  2. Season with salt, pepper, and salsa, mixing well.
  3. Divide the beef mixture among the sandwich rolls and top with shredded cheese.
  4. Butter the outside of the sandwich rolls and toast them in a pan until crispy and golden.
  5. Serve warm.

Notes

Adjust seasoning to your taste. For a spicier kick, consider adding chili powder or diced jalapeños.
