- 2 boneless, skinless chicken breasts (about 450g)
- 1 tablespoon olive oil (15 ml)

- 1/2 teaspoon (3 ml) smoked paprika (2 grams)
- 1/2 teaspoon (3 ml) black pepper (1 gram)
- 1/2 teaspoon (3 ml) salt (3 grams)
- 4 slices turkey bacon
- 1/4 cup ranch dressing (60 ml)
- 4 slices cheddar cheese
- 4 slices mozzarella cheese
- 8 slices of bread (such as sourdough or whole wheat)
- 2 tablespoons (30 ml) vegetable oil, softened (28 grams)
- 1/4 cup (60 ml) chopped green onions (25 grams)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts on a cutting board and cover them with plastic wrap.
- Pound the chicken to an even thickness, about 1/2 inch thick.
- Rub the chicken breasts with olive oil.
- In a small bowl, mix garlic powder, onion powder, smoked paprika, black pepper, and salt.
- Season both sides of the chicken breasts with the spice mixture.
- Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side, or until fully cooked.
- Remove the chicken from the skillet and let it rest for 5 minutes.
- In the same skillet, cook the turkey bacon until crispy, then set aside.
- Slice the cooked chicken into strips.
- Spread ranch dressing on one side of each slice of bread.
- Layer a slice of cheddar cheese on the non-ranch side of four bread slices.
- Add chicken strips and crispy turkey bacon on top of the cheese.
- Sprinkle chopped green onions over the chicken and bacon.
- Top with a slice of mozzarella cheese.
- Close the sandwiches with the remaining bread slices, ranch side down.
- Spread softened butter on the outside of each sandwich.
- Heat a clean skillet over medium heat.
- Grill each sandwich for 3-4 minutes per side, until the bread is golden brown and the cheese is melted.
