A comforting and easy-to-make dish featuring shredded rotisserie chicken, fresh spinach, and a golden biscuit topping.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 2 cups fresh spinach
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup Monterey Jack cheese, shredded
  • 1 can (16.3 oz) biscuit dough
  • 1 cup French fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine shredded rotisserie chicken, fresh spinach, cream of chicken soup, sour cream, and half of the Monterey Jack cheese in a large mixing bowl.
  3. Cut the biscuit dough into quarters and gently fold it into the mixture.
  4. Pour the mixture into a greased baking dish.
  5. Top with remaining Monterey Jack cheese and sprinkle French fried onions on top.
  6. Bake for 25-30 minutes or until the biscuit is cooked through and the top is golden brown.
  7. Let it cool slightly before serving.
