- 8 ounces pasta (linguine, fettuccine, or your choice)
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 8 ounces mushrooms, sliced (cremini or button mushrooms)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Extra Parmesan cheese (for serving)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
- In a large skillet, heat the olive oil and butter over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
- Toss in the sliced mushrooms and cook until they become tender, about 3-5 minutes. Season with salt and pepper.
- Add the shrimp to the skillet and cook until pink and opaque, usually around 3-4 minutes on each side.
- Pour in the heavy cream, allowing it to warm and thicken slightly. Stir in the Parmesan cheese, adjusting for taste.
- Combine the cooked pasta with the shrimp and sauce, tossing everything together until well coated. If the sauce appears thick, gradually add reserved pasta water until desired consistency is reached.
- Serve immediately, garnished with fresh parsley and additional Parmesan cheese.
Notes
Use fresh ingredients for the best flavor. Reserve pasta water for creamier sauce consistency.
