  • 8 ounces pasta (linguine, fettuccine, or your choice)
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 8 ounces mushrooms, sliced (cremini or button mushrooms)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Extra Parmesan cheese (for serving)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
  2. In a large skillet, heat the olive oil and butter over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Toss in the sliced mushrooms and cook until they become tender, about 3-5 minutes. Season with salt and pepper.
  4. Add the shrimp to the skillet and cook until pink and opaque, usually around 3-4 minutes on each side.
  5. Pour in the heavy cream, allowing it to warm and thicken slightly. Stir in the Parmesan cheese, adjusting for taste.
  6. Combine the cooked pasta with the shrimp and sauce, tossing everything together until well coated. If the sauce appears thick, gradually add reserved pasta water until desired consistency is reached.
  7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese.

Notes

Use fresh ingredients for the best flavor. Reserve pasta water for creamier sauce consistency.
