Description

A simple yet flavorful dish where spaghetti is tossed with fresh mushrooms, garlic, and chili flakes for a comforting meal.


Ingredients

  • 10 oz (280 grams) spaghetti
  • 2 tablespoons olive oil
  • 4 large garlic cloves, minced
  • ¼ teaspoon chili flakes
  • 1 lb (450 grams) mushrooms (portobello or cremini)
  • 3 tablespoons fresh parsley, chopped
  • ⅓ cup freshly grated parmesan cheese (optional)
  • Salt and pepper, to taste

Instructions

  1. Boil a large pot of salted water. Add the spaghetti and cook according to package instructions until al dente (about 8-10 minutes).
  2. Heat olive oil in a skillet over medium heat. Add the minced garlic and chili flakes, sautéing until the garlic is fragrant and lightly golden.
  3. Add the sliced mushrooms to the skillet, stirring occasionally. Cook for about 5-7 minutes until mushrooms are golden.
  4. Reserve about ½ cup of the pasta water and drain the rest.
  5. Mix the drained spaghetti into the skillet with the mushrooms and add reserved pasta water if needed.
  6. Fold in the chopped parsley, seasoning generously with salt and pepper. Sprinkle with parmesan if desired before serving.

Notes

For a creamier sauce, adjust the amount of olive oil or reserved pasta water. Presentation can be enhanced by twirling spaghetti into nests and garnishing with parsley.
