- 10 oz (280 grams) spaghetti
- 2 tablespoons olive oil
- 4 large garlic cloves, minced
- ¼ teaspoon chili flakes
- 1 lb (450 grams) mushrooms (portobello or cremini)
- 3 tablespoons fresh parsley, chopped
- ⅓ cup freshly grated parmesan cheese (optional)
- Salt and pepper, to taste
Instructions
- Boil a large pot of salted water. Add the spaghetti and cook according to package instructions until al dente (about 8-10 minutes).
- Heat olive oil in a skillet over medium heat. Add the minced garlic and chili flakes, sautéing until the garlic is fragrant and lightly golden.
- Add the sliced mushrooms to the skillet, stirring occasionally. Cook for about 5-7 minutes until mushrooms are golden.
- Reserve about ½ cup of the pasta water and drain the rest.
- Mix the drained spaghetti into the skillet with the mushrooms and add reserved pasta water if needed.
- Fold in the chopped parsley, seasoning generously with salt and pepper. Sprinkle with parmesan if desired before serving.
Notes
For a creamier sauce, adjust the amount of olive oil or reserved pasta water. Presentation can be enhanced by twirling spaghetti into nests and garnishing with parsley.
