Description

A comforting Mushroom and Tofu Stir-Fry featuring golden tofu, fresh vegetables, and aromatic garlic and ginger.


Ingredients

  • 400g firm tofu
  • 200g mushrooms (sliced)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • Vegetables of your choice (e.g., bell peppers, broccoli, carrots)
  • Salt and pepper to taste
  • Cooked rice or noodles (for serving)

Instructions

  1. Drain the tofu and press to remove excess moisture, then cut into cubes.
  2. Heat the olive oil in a large pan over medium-high heat.
  3. Add the tofu and cook until golden and crispy on all sides.
  4. Add the minced garlic and grated ginger, and sauté for an additional minute.
  5. Add the sliced mushrooms and any other vegetables you desire, stirring well.
  6. Pour in the soy sauce and stir-fry everything for about 5-7 minutes until the vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot over cooked rice or noodles.

Notes

For added crunch, sprinkle with toasted sesame seeds or crushed peanuts before serving. Leftovers can be stored in an airtight container for up to three days.
