Instructions
- Preheat the oven to 400°F (200°C).
- Peel the sweet potatoes and cut them into 1-inch (2.5 cm) cubes.
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and black pepper.
- Spread the sweet potato cubes in a single layer on a baking sheet.
- Roast the sweet potatoes for 20 minutes, stirring halfway through.
- While the sweet potatoes are roasting, combine the maple syrup, ground cinnamon, and ground nutmeg in a small bowl.
- After 20 minutes, remove the sweet potatoes from the oven.
- Drizzle the maple syrup mixture over the sweet potatoes and gently toss to coat.
- Add the cranberries and chopped pecans to the baking sheet with the sweet potatoes.
- Return the baking sheet to the oven and roast for an additional 10-15 minutes, until sweet potatoes are tender and cranberries have burst.
- Remove the baking sheet from the oven and sprinkle the fresh rosemary over the sweet potato bites.
