Delicious no bake chocolate oatmeal bars made with oats, chocolate, and peanut butter, perfect for a quick snack.

- 1 cup butter
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 3 cups rolled oats
- 1 cup semisweet or dark chocolate chips
- 1/2 cup peanut butter
Instructions
- Prepare your baking dish by lining it with parchment paper.
- In a large saucepan, melt the butter and brown sugar together over medium heat until the butter melts and the sugar dissolves.
- Add the vanilla extract and mix well.
- Stir in the rolled oats, cooking on low heat for 3 to 4 minutes until well blended.
- Pour half of the oat mixture into the prepared baking dish and press it down evenly.
- In a small microwave-safe bowl, melt the peanut butter and chocolate chips together. Stir until smooth.
- Pour the chocolate mixture over the pressed oat layer, reserving about 1/4 cup for later drizzling.
- Spread the chocolate mixture evenly over the crust.
- Add the remaining oat mixture, pressing gently on top.
- Drizzle with the reserved chocolate mixture.
- Refrigerate for 2 to 3 hours or overnight for best results. Bring to room temperature before cutting into bars.
Notes
For a smoother filling, use creamy peanut butter, or for a textured filling, use chunky peanut butter. Adding nuts or dried fruits can enhance nutrition.
