No Bake Chocolate Oatmeal Bars

Description

Delicious no bake chocolate oatmeal bars made with oats, chocolate, and peanut butter, perfect for a quick snack.


Ingredients

  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Prepare your baking dish by lining it with parchment paper.
  2. In a large saucepan, melt the butter and brown sugar together over medium heat until the butter melts and the sugar dissolves.
  3. Add the vanilla extract and mix well.
  4. Stir in the rolled oats, cooking on low heat for 3 to 4 minutes until well blended.
  5. Pour half of the oat mixture into the prepared baking dish and press it down evenly.
  6. In a small microwave-safe bowl, melt the peanut butter and chocolate chips together. Stir until smooth.
  7. Pour the chocolate mixture over the pressed oat layer, reserving about 1/4 cup for later drizzling.
  8. Spread the chocolate mixture evenly over the crust.
  9. Add the remaining oat mixture, pressing gently on top.
  10. Drizzle with the reserved chocolate mixture.
  11. Refrigerate for 2 to 3 hours or overnight for best results. Bring to room temperature before cutting into bars.

Notes

For a smoother filling, use creamy peanut butter, or for a textured filling, use chunky peanut butter. Adding nuts or dried fruits can enhance nutrition.
