Delicious, quick, and easy no bake peanut butter oat cups that combine creamy peanut butter, rich chocolate, and wholesome rolled oats for a satisfying snack.


Ingredients

  • 1.5 cups peanut butter
  • 1.5 cups rolled oats, processed into oat flour
  • 1/4 cup maple syrup
  • 1 cup chocolate chips
  • 1 teaspoon coconut oil (optional)

Instructions

  1. Blend the rolled oats in a food processor until they form a fine oat flour.
  2. In a microwave-safe bowl, combine the peanut butter and maple syrup. Microwave for 40-60 seconds.
  3. Stir the mixture until fully combined and smooth.
  4. Gradually add the oat flour and mix well. If it’s too dry, add a teaspoon more maple syrup or peanut butter.
  5. Prepare your muffin pan with cupcake liners or use a silicone muffin mold.
  6. Scoop the mixture into each muffin slot, pressing down firmly.
  7. In another bowl, melt the chocolate chips and coconut oil in 30-second intervals until smooth.
  8. Pour the melted chocolate over each cup and smooth it out.
  9. Cool in the refrigerator for 2-3 hours, then remove and enjoy!
