- 1.5 cups peanut butter
- 1.5 cups rolled oats, processed into oat flour
- 1/4 cup maple syrup
- 1 cup chocolate chips
- 1 teaspoon coconut oil (optional)
Instructions
- Blend the rolled oats in a food processor until they form a fine oat flour.
- In a microwave-safe bowl, combine the peanut butter and maple syrup. Microwave for 40-60 seconds.
- Stir the mixture until fully combined and smooth.
- Gradually add the oat flour and mix well. If it’s too dry, add a teaspoon more maple syrup or peanut butter.
- Prepare your muffin pan with cupcake liners or use a silicone muffin mold.
- Scoop the mixture into each muffin slot, pressing down firmly.
- In another bowl, melt the chocolate chips and coconut oil in 30-second intervals until smooth.
- Pour the melted chocolate over each cup and smooth it out.
- Cool in the refrigerator for 2-3 hours, then remove and enjoy!

For variations, consider using different nut butters or sweeteners. Experiment with add-ins like chia seeds or vanilla for extra flavor.
