Ingredients

  • – 1 stick (8 tablespoons (120 ml)) unsalted butter, cubed
  • – 1 cup (240 ml) all-purpose flour
  • – 1 cup (200 g) light or dark brown sugar
  • – 2 teaspoons (10 ml) baking powder
  • – 1/2 teaspoon (2.5 ml) cinnamon
  • – 1/2 teaspoon (2.5 ml) kosher salt
  • – 1 cup (240 ml) milk
  • – 1 tablespoon (15 ml) vanilla
  • – 5-6 peaches, cut into 8 wedges
  • – 2 tablespoons (30 ml) honey
  • – 4 tablespoons (60 ml) unsalted butter
  • – 1/4 cup (60 ml) honey

Instructions

  1. Set your oven to 375°F. Place the cubed butter in a 9×13 inch baking dish and let it melt in the oven for about 10 minutes.
  2. For the batter, combine the flour, 3/4 cup of the brown sugar, the baking powder, cinnamon, and salt. Stir in the milk and vanilla until just blended.
  3. In a separate bowl, mix the peach slices with 1/4 cup of brown sugar and the honey.
  4. Arrange half of the peaches on top of the melted butter. Pour the batter over them without stirring. Spread the remaining peaches over the batter.
  5. Bake for 50-55 minutes until the middle is just firm and the edges start to turn golden brown.
  6. Meanwhile, heat the butter and honey together in a saucepan, boiling for 2 minutes before taking it off the heat.
  7. Serve the cobbler warm or at room temperature, topped with ice cream and a drizzle of the honey-butter mixture.
