- 4 cups loosely packed baby spinach leaves, torn
- 0.5 oz container fresh basil leaves (stems removed)
- 1–8 oz jar sun-dried tomatoes (oil drained)
- 2 cups rotisserie chicken (diced)
- 5 cloves garlic (minced)
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 2/3 cup parmesan, grated or shredded (plus extra for topping)
Instructions
- Preheat your oven to 350 degrees.
- Spray a 9×13 casserole dish with non-stick spray.
- Add the dry orzo, chicken stock, and heavy cream to the dish.
- Incorporate the torn spinach leaves, fresh basil, sun-dried tomatoes, diced rotisserie chicken, minced garlic, Italian seasoning, salt, and pepper.
- Give everything a good stir, ensuring all the ingredients blend well together.
- Lay everything into a flat layer across the dish.
- Sprinkle with extra parmesan cheese (optional).
- Bake uncovered for 35 minutes.
- Check the orzo for tenderness; if necessary, bake a few more minutes.
- Allow the casserole to rest for 10 minutes before serving.
- Mix everything once more before serving hot.
Notes
For deeper flavor, sauté the garlic before adding it to the dish. You can use fresh or frozen spinach based on availability.
