  • 2 cups heavy cream
  • 4 cups loosely packed baby spinach leaves, torn
  • 0.5 oz container fresh basil leaves (stems removed)
  • 18 oz jar sun-dried tomatoes (oil drained)
  • 2 cups rotisserie chicken (diced)
  • 5 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2/3 cup parmesan, grated or shredded (plus extra for topping)

Instructions

  1. Preheat your oven to 350 degrees.
  2. Spray a 9×13 casserole dish with non-stick spray.
  3. Add the dry orzo, chicken stock, and heavy cream to the dish.
  4. Incorporate the torn spinach leaves, fresh basil, sun-dried tomatoes, diced rotisserie chicken, minced garlic, Italian seasoning, salt, and pepper.
  5. Give everything a good stir, ensuring all the ingredients blend well together.
  6. Lay everything into a flat layer across the dish.
  7. Sprinkle with extra parmesan cheese (optional).
  8. Bake uncovered for 35 minutes.
  9. Check the orzo for tenderness; if necessary, bake a few more minutes.
  10. Allow the casserole to rest for 10 minutes before serving.
