Ingredients

Scale
  • 1 pound (454 g) ground beef
  • 1/2 teaspoon (3 ml) salt
  • Pinch of black pepper
  • 1 packet taco seasoning (or about 3 1/2 tablespoons (53 ml) homemade taco seasoning)
  • 2 cups (473 ml) water
  • 1 cup (240 ml) jarred mild salsa
  • 8 ounces (227 g) uncooked rotini pasta
  • 1 1/2 cups (170 g) shredded Mexican-style cheese
  • Optional toppings – chopped tomatoes (avocado, crushed tortilla chips, chopped cilantro)

Instructions

  1. Warm a large, deep pan over medium heat.
  2. Add the ground beef and season it with salt and a pinch of black pepper.
  3. Cook the beef, stirring from time to time, until it is fully browned.
  4. Remove excess fat from the pan.
  5. Mix the taco seasoning into the cooked beef, then combine with water, salsa, and uncooked rotini.
  6. Allow the mixture to reach a boil.
  7. Stir, cover the pan, and lower the heat to let it simmer.
  8. Cook for approximately 15 minutes until the pasta is soft.
  9. Switch off the heat and blend in the shredded cheese.
  10. Taste and adjust with more salt and pepper if necessary.
  11. Serve with optional toppings of your choice.

Notes

  • For a lighter option, use lean ground beef or turkey to reduce fat.
  • Customize spiciness with a spicier salsa or hot sauce to taste.
  • Enhance flavor by adding diced onions or bell peppers with the ground beef.
