- 1 packet taco seasoning (or about 3 1/2 tablespoons (53 ml) homemade taco seasoning)
- 2 cups (473 ml) water
- 1 cup (240 ml) jarred mild salsa
- 8 ounces (227 g) uncooked rotini pasta
- 1 1/2 cups (170 g) shredded Mexican-style cheese
- Optional toppings – chopped tomatoes (avocado, crushed tortilla chips, chopped cilantro)
Instructions
- Warm a large, deep pan over medium heat.
- Add the ground beef and season it with salt and a pinch of black pepper.
- Cook the beef, stirring from time to time, until it is fully browned.
- Remove excess fat from the pan.
- Mix the taco seasoning into the cooked beef, then combine with water, salsa, and uncooked rotini.
- Allow the mixture to reach a boil.
- Stir, cover the pan, and lower the heat to let it simmer.
- Cook for approximately 15 minutes until the pasta is soft.
- Switch off the heat and blend in the shredded cheese.
- Taste and adjust with more salt and pepper if necessary.
- Serve with optional toppings of your choice.
