  • 2 tablespoons balsamic vinegar (30 ml)
  • 2 tablespoons orange juice (30 ml)
  • 1 tablespoon honey (15 ml)
  • 1 teaspoon Dijon mustard (5 ml)
  • 1/4 cup chopped fresh parsley (15 g)
  • 1/4 cup crumbled goat cheese (60 g)
  • 1/4 cup chopped walnuts (30 g)

Instructions

  1. Rinse the quinoa under cold water using a fine-mesh strainer.
  2. Combine the quinoa and 2 cups of water in a saucepan.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce the heat to low, cover the saucepan, and simmer for 15 minutes.
  5. Remove the saucepan from heat and let it sit, covered, for 5 minutes.
  6. Fluff the quinoa with a fork and set it aside to cool.
  7. Preheat the oven to 400°F (200°C).
  8. Toss the diced beets with 1 tablespoon of olive oil, salt, and pepper.
  9. Spread the beets on a baking sheet in a single layer.
  10. Roast the beets in the oven for 25-30 minutes, or until tender.
  11. In a small bowl, whisk together balsamic vinegar, orange juice, honey, Dijon mustard, and the remaining olive oil.
  12. Add salt and pepper to the dressing to taste.
  13. In a large mixing bowl, combine the cooked quinoa, roasted beets, chopped parsley, crumbled feta, and chopped walnuts.
  14. Pour the dressing over the salad ingredients in the large bowl.
  15. Toss the salad gently to combine all ingredients thoroughly.
  16. Adjust seasoning with additional salt and pepper, if needed.
  17. Serve the salad immediately or chill in the refrigerator before serving.
