- 2 cups water (480 ml)
- 1 lb beef, peeled and diced (450 g)
- 2 tablespoons olive oil (30 ml)

- 2 tablespoons orange juice (30 ml)
- 1 tablespoon honey (15 ml)
- 1 teaspoon Dijon mustard (5 ml)
- 1/4 cup chopped fresh parsley (15 g)
- 1/4 cup crumbled goat cheese (60 g)
- 1/4 cup chopped walnuts (30 g)
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- Combine the quinoa and 2 cups of water in a saucepan.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low, cover the saucepan, and simmer for 15 minutes.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes.
- Fluff the quinoa with a fork and set it aside to cool.
- Preheat the oven to 400°F (200°C).
- Toss the diced beets with 1 tablespoon of olive oil, salt, and pepper.
- Spread the beets on a baking sheet in a single layer.
- Roast the beets in the oven for 25-30 minutes, or until tender.
- In a small bowl, whisk together balsamic vinegar, orange juice, honey, Dijon mustard, and the remaining olive oil.
- Add salt and pepper to the dressing to taste.
- In a large mixing bowl, combine the cooked quinoa, roasted beets, chopped parsley, crumbled feta, and chopped walnuts.
- Pour the dressing over the salad ingredients in the large bowl.
- Toss the salad gently to combine all ingredients thoroughly.
- Adjust seasoning with additional salt and pepper, if needed.
- Serve the salad immediately or chill in the refrigerator before serving.
