- 1 head green cabbage (about 1 kg)
- 2 tablespoons vegetable oil (30 ml)
- 1 tablespoon (15 ml) garlic paste
- 2 teaspoons (10 ml) fennel seeds or caraway seeds
- 1 teaspoon (5 ml) salt to taste
- 1/2 teaspoon (3 ml) ground black pepper to taste
- fresh parsley for optional garnish
Instructions
- Heat your oven to 400°F and cover a baking tray with parchment paper.
- Cut the cabbage into 1-inch thick slices and place them on the lined tray. Coat each slice with half of the vegetable oil, garlic paste, fennel seeds, salt, and black pepper. Gently turn them over and apply the rest of the oil, garlic, and spices.
- Bake for 25 minutes, or until the edges touching the tray turn golden brown. Carefully use a metal spatula to flip the cabbage slices. Continue baking for an additional 20 minutes, or until the slices are tender with crispy edges. Pro Tip: Avoid moving the slices while they bake, except for the one flip. Leaving them in contact with the tray in the high heat of the oven helps achieve crisp edges.
- Present them warm, adding chopped fresh parsley as a garnish if desired.
- Note: The crispiness of leftover cabbage slices diminishes by the next day.
