- 2 medium yellow squashes, sliced

Instructions
- Preheat your oven to 425°F (220°C).
- Combine sliced zucchinis and yellow squashes in a large bowl.
- Drizzle with olive oil and sprinkle with garlic powder, salt, black pepper, and Italian seasoning if using.
- Toss until the vegetables are evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 20–25 minutes or until fork-tender and slightly caramelized, stirring halfway through.
- Remove from the oven and serve warm as a side dish.
Notes
For added flavor, consider using fresh herbs or sprinkling breadcrumbs during the last five minutes of roasting.
