- 2 tablespoons olive oil (30 ml)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 1 teaspoon garlic powder (3 g)
- 1 teaspoon onion powder (3 g)
- 2 tablespoons beef tallow (28 g)
- 1 tablespoon fresh rosemary, chopped (3 g)
- 1 tablespoon fresh thyme, chopped (3 g)
- 2 cloves garlic, minced
Instructions
- Pat the venison steaks dry with paper towels.
- Season both sides of the steaks with salt, black pepper, garlic powder, and onion powder.
- Heat olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the venison steaks to the skillet.
- Sear the steaks for 3-4 minutes on one side without moving them.
- Flip the steaks and sear for another 3-4 minutes on the other side.
- Reduce the heat to medium and add the unsalted butter to the skillet.
- Add the minced garlic, chopped rosemary, and chopped thyme to the butter.
- Tilt the skillet slightly and spoon the melted butter over the steaks.
- Continue basting the steaks for 1-2 minutes to infuse flavors.
- Remove the skillet from heat and let the steaks rest for 5 minutes before serving.
