Ingredients

  • 8 oz (227 g) burrata cheese
  • 3 peaches
  • 4 slices beef prosciutto, cut into quarter pieces
  • 2 tbsp (30 ml) basil, roughly chopped
  • 1 tbsp (15 ml) white vinegar (or apple cider vinegar)
  • 3 tbsp (45 ml) olive oil
  • 1/4 tsp (1 ml) sea salt, add more to taste on top of salad

Instructions

  1. Slice the peaches in half, take out the pit, and cut each half into eight wedges.
  2. Combine the white vinegar and olive oil with a quarter teaspoon of sea salt in a small mixing bowl. Stir together until well blended, then put aside.
  3. Lay out the peach slices on a serving dish and intersperse with the pieces of beef prosciutto.
  4. Place the whole burrata on the platter and pour the vinaigrette over it. Sprinkle the chopped basil and a bit more sea salt on top. Enjoy it as is or pair it with some toasted bread.
