Instructions

  1. Prepare the peach filling by combining peaches, sugar, lemon juice, cornstarch, cinnamon, and salt in a saucepan. Cook until thickened, then cool completely.
  2. Mix dry ingredients for cookie base in a medium bowl.
  3. Cream butter and sugars, then add eggs and extracts.
  4. Gradually mix in dry ingredients to form cookie dough.
