Ingredients

Scale
  • 1/4 cup (60 ml) vegetable oil
  • 1/2 cup (100 g) packed light brown sugar
  • 1/4 teaspoon (1 ml) ground nutmeg
  • 5 fresh peaches – peeled, pitted and halved
  • 1/2 cup (120 ml) vegetable oil, softened
  • 1/2 cup (100 g) white sugar
  • 1 egg
  • 1 1/4 cups (155 g) all-purpose flour
  • 2 teaspoons (10 ml) baking powder
  • 1/2 teaspoon (3 ml) salt
  • 1/2 cup (120 ml) milk

Instructions

  1. Set your oven to a temperature of 375 degrees Fahrenheit (190 degrees Celsius) to preheat.
  2. In an 8-inch square baking dish, heat 1/4 cup of vegetable oil until melted. Sprinkle with the light brown sugar and ground nutmeg. Place the peach halves, with the cut side facing down, into the dish.
  3. In a large mixing bowl, blend together 1/2 cup of vegetable oil and 1/2 cup of white sugar using an electric mixer until the mixture becomes light and airy. Mix in the egg.
  4. Combine the all-purpose flour, baking powder, and salt in a separate bowl; gradually incorporate this dry mixture into the oil mixture, alternating with the milk, and mix thoroughly after each addition.
  5. Evenly spread the prepared cake batter over the peach halves in the baking dish.
  6. Place in the preheated oven and bake until the top is lightly golden, approximately 35 to 40 minutes.
  7. Once baked, remove the cake from the oven and allow it to rest in the pan for 5 minutes. Then, carefully turn the cake out onto a serving platter.

Notes

  • Ensure the peaches are ripe yet firm for optimal texture and flavor in the cake.
  • Enhance the taste by adding a hint of cinnamon or a splash of vanilla extract to the batter.
  • To prevent sticking, grease the baking dish with butter before adding the oil and sugar. Serve warm with whipped cream or vanilla ice cream.
