- 5 fresh peaches – peeled, pitted and halved

- 1 egg
- 1 1/4 cups (155 g) all-purpose flour
- 2 teaspoons (10 ml) baking powder
- 1/2 teaspoon (3 ml) salt
- 1/2 cup (120 ml) milk
Instructions
- Set your oven to a temperature of 375 degrees Fahrenheit (190 degrees Celsius) to preheat.
- In an 8-inch square baking dish, heat 1/4 cup of vegetable oil until melted. Sprinkle with the light brown sugar and ground nutmeg. Place the peach halves, with the cut side facing down, into the dish.
- In a large mixing bowl, blend together 1/2 cup of vegetable oil and 1/2 cup of white sugar using an electric mixer until the mixture becomes light and airy. Mix in the egg.
- Combine the all-purpose flour, baking powder, and salt in a separate bowl; gradually incorporate this dry mixture into the oil mixture, alternating with the milk, and mix thoroughly after each addition.
- Evenly spread the prepared cake batter over the peach halves in the baking dish.
- Place in the preheated oven and bake until the top is lightly golden, approximately 35 to 40 minutes.
- Once baked, remove the cake from the oven and allow it to rest in the pan for 5 minutes. Then, carefully turn the cake out onto a serving platter.
