- 1/4 cup (50 g/1.7 oz) brown sugar, preferably dark
- 1 cup (200g/7 oz) granulated sugar
- 1/4 cup (35 g/1.3 oz) all-purpose flour
- 1/2 teaspoon (3 ml) ground cinnamon
- 1/4 teaspoon (1 ml) salt
- 5 cups (1200 ml) pitted, peeled, and chopped peaches (about 7–8 peaches/2.5 pounds (1.13 kg))
- 6 tablespoons (90 ml) heavy cream
- 1/2 teaspoon (3 ml) vanilla extract, optional
Instructions
- Note: Ensure the filling is poured onto a crust that is either hot or warm, so it’s important to prepare it while the crust bakes.
- Set your oven to 350°F (180°C) and let it preheat. Lightly coat a 9×13-inch baking dish with grease or line it with parchment paper, leaving enough excess on the sides to help lift out the bars once they’re done. Put this aside.
- For the crust: Blend flour, granulated sugar, and salt in a food processor briefly until mixed. Add in the butter and pulse until the mix is crumbly, resembling coarse sand. Alternatively, you can mix everything together in a bowl using a pastry cutter. Reserve 1½ cups of the crumb mixture for the topping. Pour the remaining crumbs into the prepared dish and press them down firmly to form a crust. Bake this for around 15 minutes, or until the edges start to brown. While it bakes, prepare the streusel topping and filling.
- For the streusel topping: Mix the brown sugar into the reserved crumb mixture, using your fingers to form large dough clumps.
- For the filling: In a large bowl, combine sugar, flour, cinnamon, and salt. Add the peaches and mix everything together. In a separate small bowl, blend heavy cream with vanilla extract, then incorporate this into the peach mixture. Stir thoroughly. Spread the peach mixture over the warm crust and evenly distribute the streusel topping over it.
- Bake the bars for approximately 45 minutes, until the juices bubble and the topping turns golden brown. Let them cool entirely on a wire rack.
- Chill the bars in the refrigerator for at least 2 hours to ensure the filling sets before slicing them into squares.
- The bars can be stored in the fridge for up to 3 days.
