- 3/4 cup (180 ml) natural peanut butter
- 1 3/4 cups (420 ml) old-fashioned or quick-cooking oats
- 1/3 cup (80 ml) honey (or slightly more if needed to bind everything together)
- 1/3 cup (80 ml) dairy-free chocolate chips (I prefer mini)
- Optional: 1/4 cup (60 ml) wheat bran, sunflower seeds, flax seeds, chia seeds, or sunflower seeds
Instructions
- If the peanut butter has been stored in the fridge, place it in a medium-sized, microwave-safe bowl and heat it in the microwave for 20-30 seconds until it becomes softer. Allow it to cool down so it doesn’t melt the chocolate chips.
- Combine all the remaining ingredients in the bowl, mixing thoroughly for 2-3 minutes until everything is well blended. If the mixture is too sticky, you can chill it in the fridge for an hour or put it in the freezer for 20 minutes to help it firm up a bit.
- Prepare a baking dish or a cookie sheet with edges by covering it with wax or parchment paper. Shape the mixture into approximately 24 balls, each about the size of a tablespoon, using either a cookie scoop, spoon, or your hands. Arrange them in a single layer on the prepared baking dish or cookie sheet. Chill in the refrigerator for an hour or freeze for at least 20 minutes to ensure they maintain their form before transferring them to a storage container.
- For storage, place the energy balls in a Ziploc bag or a container with a lid. Keep them in the refrigerator for up to two weeks or freeze them for up to three months.

- Consider adding a mix of wheat bran, sunflower seeds, flax seeds, chia seeds, or extra sunflower seeds for added crunch and nutrition.
