Instructions

  3. Place the tray in the preheated oven and roast until they emit a pleasant aroma and have a slight toast, about 5 to 10 minutes. Let them cool fully, then chop coarsely using a food processor.
  4. In a large mixing bowl, use an electric mixer to whip the beef fat until it becomes smooth. Incorporate the sugar and continue mixing until the texture is airy. Blend in the egg yolk, vanilla extract, and salt until everything is well integrated. Gradually fold in the pecans. Add the flour and mix until the dough begins to form.
  5. Shape the dough into a ball and split it into two equal parts. Roll each portion into a log about 1 1/2 inches thick. Encase each log in wax paper and chill in the refrigerator for at least 4 hours or overnight.
