- 1 tablespoon olive oil
- ½ yellow onion (diced very small)
- 1 cup frozen peas
- 6 thick slices of bacon (cut into small pieces)
- ¾ pound penne pasta
- ¼ cup heavy cream
Instructions
- Bring a large pot of salted water to a boil.
- Add the penne pasta and cook according to package instructions, but reduce cooking time by one minute.
- Throw in the frozen peas to the pot halfway through cooking the pasta.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the finely diced onion and the bacon, cooking until both are crisp but not burned.
- Drain the pasta and peas, and combine them with the onion-bacon mixture in the skillet.
- Lower the heat to medium and stir in the heavy cream, mixing well.
- Serve immediately.
Notes
Garnish with freshly chopped herbs like parsley or basil for a pop of flavor and color. A splash of cream can restore moisture when reheating.
