Instructions

  1. Remove the steak from the refrigerator and allow it to come to room temperature, about 30 minutes.
  2. Pat the steak dry with paper towels, and season both sides with sea salt and freshly cracked black pepper.
  3. Preheat a cast iron skillet or grill over high heat until it reaches a temperature of about 450°F.
  4. (Optional) Add a light coating of olive oil or a small pat of butter to the cooking surface.
  5. Place the steak in the skillet or on the grill, ensuring not to overcrowd the cooking area.
  6. Sear for about 4-5 minutes on one side without moving it, allowing a crust to form.
  7. Flip the steak and cook for an additional 3-4 minutes on the other side until reaching an internal temperature of 130°F to 135°F for medium rare.
  8. Remove the steak from the heat and let it rest for at least 5 minutes before slicing.
