- Freshly cracked black pepper, to taste

Instructions
- Remove the steak from the refrigerator and allow it to come to room temperature, about 30 minutes.
- Pat the steak dry with paper towels, and season both sides with sea salt and freshly cracked black pepper.
- Preheat a cast iron skillet or grill over high heat until it reaches a temperature of about 450°F.
- (Optional) Add a light coating of olive oil or a small pat of butter to the cooking surface.
- Place the steak in the skillet or on the grill, ensuring not to overcrowd the cooking area.
- Sear for about 4-5 minutes on one side without moving it, allowing a crust to form.
- Flip the steak and cook for an additional 3-4 minutes on the other side until reaching an internal temperature of 130°F to 135°F for medium rare.
- Remove the steak from the heat and let it rest for at least 5 minutes before slicing.
Notes
