Instructions
- Place the diced peaches, lime juice, and sugar into a food processor or blender, and blend until the mixture is fully smooth and free of chunks. You should end up with approximately 1 quart of this purée. Pour the purée through a fine sieve into a sealed container and season with salt to your preference. Lay a piece of plastic wrap directly onto the surface of the purée and refrigerate for 2 to 3 hours until it is thoroughly chilled.
- Following the instructions provided by the ice cream maker’s manufacturer, churn the mixture. Once churned, transfer it to a container and freeze for an additional 2 to 3 hours, or until it reaches a firm consistency.
