- 2 cups (250g) all-purpose flour
- 1 ½ teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ¾ cup (150g) granulated sugar
- ¾ cup (150g) brown sugar
- 3 large eggs
- 1 cup (240ml) vegetable oil
- 1 teaspoon vanilla extract
- 2 cups (220g) grated carrots
- 1 cup (200g) crushed pineapple, drained
- ½ cup (50g) chopped walnuts (optional)
- For Frosting: 8 oz (225g) cream cheese, softened, ½ cup (115g) unsalted butter, softened, 4 cups (500g) powdered sugar, 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Fold in grated carrots and crushed pineapple until well combined.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Gradually incorporate dry ingredients into the wet mixture, folding gently to avoid overmixing. Add walnuts if using.
- Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cakes cool in pans for a few minutes, then transfer to wire racks to cool completely.
- For frosting, beat together cream cheese and unsalted butter until smooth, then gradually mix in powdered sugar, vanilla extract, and optional pineapple juice.
- Once cooled, place one cake layer on a serving plate, frost the top, add the second layer, and frost the top and sides of the cake.
Notes
For a twist, consider adding a pinch of nutmeg or coconut flakes to the batter. Freshly grated carrots provide better flavor and texture than pre-packaged ones.
