Description

A moist and tropical cake featuring layers of tender carrots and sweet crushed pineapple, topped with luscious cream cheese frosting.


Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ¾ cup (150g) brown sugar
  • 3 large eggs
  • 1 cup (240ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups (220g) grated carrots
  • 1 cup (200g) crushed pineapple, drained
  • ½ cup (50g) chopped walnuts (optional)
  • For Frosting: 8 oz (225g) cream cheese, softened, ½ cup (115g) unsalted butter, softened, 4 cups (500g) powdered sugar, 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  3. Fold in grated carrots and crushed pineapple until well combined.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually incorporate dry ingredients into the wet mixture, folding gently to avoid overmixing. Add walnuts if using.
  6. Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Let cakes cool in pans for a few minutes, then transfer to wire racks to cool completely.
  8. For frosting, beat together cream cheese and unsalted butter until smooth, then gradually mix in powdered sugar, vanilla extract, and optional pineapple juice.
  9. Once cooled, place one cake layer on a serving plate, frost the top, add the second layer, and frost the top and sides of the cake.

Notes

For a twist, consider adding a pinch of nutmeg or coconut flakes to the batter. Freshly grated carrots provide better flavor and texture than pre-packaged ones.
