- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- 2 cups all-purpose flour
- ¼ teaspoon salt
- 4 large eggs
- 1 ½ cups granulated sugar
- ¼ cup all-purpose flour
- 1 cup freshly squeezed lemon juice (about 4–5 lemons)
- Zest of 2 lemons
- Powdered sugar, for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Cream together 1 cup of butter and ½ cup of sugar until light and fluffy.
- Gradually add 2 cups of flour and ¼ teaspoon of salt, mixing until crumbly.
- Press the mixture evenly into the baking pan.
- Bake the crust for 15-20 minutes until lightly golden. Allow to cool slightly.
- In a separate bowl, beat 4 eggs and mix in 1 ½ cups of sugar, ¼ cup of flour, lemon juice, and lemon zest until smooth.
- Pour the lemon filling over the pre-baked crust and spread evenly.
- Bake again for 20-25 minutes until the filling is set.
- Cool at room temperature for 1-2 hours, then cut into squares and dust with powdered sugar if desired.
Notes
For best flavor, use freshly squeezed lemon juice. Adjust sugar based on your taste preferences.
