Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 1 cup freshly squeezed lemon juice (about 45 lemons)
  • Zest of 2 lemons
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Cream together 1 cup of butter and ½ cup of sugar until light and fluffy.
  3. Gradually add 2 cups of flour and ¼ teaspoon of salt, mixing until crumbly.
  4. Press the mixture evenly into the baking pan.
  5. Bake the crust for 15-20 minutes until lightly golden. Allow to cool slightly.
  6. In a separate bowl, beat 4 eggs and mix in 1 ½ cups of sugar, ¼ cup of flour, lemon juice, and lemon zest until smooth.
  7. Pour the lemon filling over the pre-baked crust and spread evenly.
  8. Bake again for 20-25 minutes until the filling is set.
  9. Cool at room temperature for 1-2 hours, then cut into squares and dust with powdered sugar if desired.

Notes

For best flavor, use freshly squeezed lemon juice. Adjust sugar based on your taste preferences.
