- 4 cups (960 ml) pomegranate juice
- 1/2 cup + 2 tablespoons (150 g) sugar
- 1/4 cup (60 ml) lemon juice, about one large lemon
Instructions
- Place a saucepan over medium-high heat and combine the pomegranate juice, sugar, and lemon juice.
- Once it reaches a boil, lower the heat to medium-low, ensuring the liquid is gently bubbling at the center.
- Allow it to simmer uncovered for around an hour, stirring now and then to prevent the sugars from sticking to the pan’s base.
- After 45 minutes, observe that much of the liquid has evaporated. Slightly decrease the heat further, letting it simmer for an additional 15 minutes.
- Test the consistency by dipping a spoon into the mixture; if it coats the spoon, it’s ready.
- Switch off the heat and allow the glaze to cool for 30 minutes before transferring it into a jar. Though it may seem thin initially, it will thicken upon cooling.
- This preparation should produce roughly 1 cup and 2 tablespoons of pomegranate molasses. Keep it refrigerated for up to 6 months.

- Stir occasionally while simmering to prevent the sugar from burning.
