Ingredients

- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- 2 tablespoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- Salt and pepper to taste
- 8 oz egg noodles
- Fresh parsley for garnish
Instructions
- Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
- Add onions and garlic, and cook until softened, about 2-3 minutes.
- Stir in the mushrooms and cook until tender, about 3-4 minutes.
- Pour in beef broth, Worcestershire sauce, and Dijon mustard; bring to a simmer.
- Reduce the heat and stir in sour cream. Season with salt and pepper to taste.
- Cook egg noodles according to package instructions.
- Serve the beef stroganoff over the egg noodles and garnish with fresh parsley.
Notes
For a lighter version, use Greek yogurt instead of sour cream. You can also mix different mushrooms for a more complex flavor.
