  • 4 cups boiling water (946 ml)
  • 3 large peaches, ripe
  • 2 cups water (473 ml)
  • 1/3 cup granulated sugar (80 g) – use 1/2 cup for a sweeter tea

Instructions

  1. Heat up 4 cups of water until it reaches a gentle simmer on the stove or using an electric kettle.
  2. Once heated, take it off the heat and immerse the tea bags completely, allowing them to infuse for 5 minutes. Remove the tea bags carefully, and let the tea cool before placing it in the fridge to chill.
  3. In a blender, combine 1 cup of water, the sugar, and the diced peaches. Blend briefly for 2-3 seconds, just enough to break them down, then transfer the mixture into a pot. Add the remaining 1 cup of water and heat over medium heat on the stove.
  4. Bring the mixture to a boil, then lower the heat to let it simmer for 5 minutes. Take off the heat and allow it to steep for an additional 30 minutes.
  5. Strain the syrup through a fine sieve into a large pitcher or jar, pressing down on the peach mixture to extract all the juice. Chill in the fridge for about 30 minutes.
  6. Mix the chilled black tea and peach syrup in a large pitcher. Stir well to combine, then add ice. Finish by garnishing with peach slices and serve.
