- 2 medium yellow squashes, sliced
- 1 cup cherry tomatoes, halved

Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced zucchinis, yellow squashes, cherry tomatoes, and minced garlic.
- Drizzle with olive oil and season with salt, pepper, and Italian herbs (if using). Toss everything together until well coated.
- Spread the vegetable mixture onto a baking sheet in a single layer.
- Sprinkle grated Parmesan cheese over the top.
