Description

A delightful medley of zucchini, yellow squash, and cherry tomatoes roasted with garlic and Parmesan cheese for a vibrant and flavorful dish.

Ingredients

Scale
  • 2 medium zucchinis, sliced
  • 2 medium yellow squashes, sliced
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchinis, yellow squashes, cherry tomatoes, and minced garlic.
  3. Drizzle with olive oil and season with salt, pepper, and Italian herbs (if using). Toss everything together until well coated.
  4. Spread the vegetable mixture onto a baking sheet in a single layer.
  5. Sprinkle grated Parmesan cheese over the top.
  6. Roast in the preheated oven for about 20-25 minutes, or until the vegetables are tender and the cheese is golden.
  7. Garnish with fresh parsley if desired and serve warm as a side dish!

Notes

For a smoky flavor, increase the roasting time slightly while watching closely to avoid overcooking.
