Ingredients

  • 1 pound fresh asparagus
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated parmesan cheese
  • The juice of 1 lemon (about 1 tablespoon)
  • Red pepper flakes (optional for serving)

Instructions

  1. Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Rinse the asparagus spears to clean them gently. Use paper towels to dry them off completely. Trim the thick ends, cutting about an inch from the bottom to remove the woody parts.
  3. Place the cleaned asparagus in a single layer on the prepared baking sheet. Drizzle the olive oil over the spears, then sprinkle with kosher salt and black pepper. Toss the asparagus to coat thoroughly.
  4. Sprinkle the grated parmesan cheese evenly over the asparagus.
  5. Roast in the oven for about 10 minutes, until the asparagus is fork-tender and slightly crispy.
  6. Once done, remove from the oven and squeeze fresh lemon juice over the top. Add a pinch of red pepper flakes, if desired.

Notes

For added flavor, consider adding minced garlic or fresh herbs before roasting. Freshly grated parmesan will yield better flavors than pre-packaged options.
