- Begin by slicing a circular section around the stem of the pumpkin with a sharp knife, angling the blade inward, and remove the top. Use a sturdy metal spoon to scoop out the seeds and fibrous strands from inside the pumpkin. Place the collected seeds into a strainer and rinse them under running water, separating them from the pulp.
- Use a measuring cup to determine the amount of pumpkin seeds you have. Transfer the seeds to a medium-sized pot. For every half cup of seeds, pour in two cups of water and add a tablespoon of salt. If you prefer your seeds saltier, feel free to add more salt. Bring the water and seeds to a boil, then reduce the heat and let them simmer for 10 minutes. Once done, remove from the stove and drain the water.
- Set the oven temperature to 400°F. Use about a teaspoon of olive oil to coat the bottom of a roasting pan or a thick baking sheet. Spread the seeds evenly across the pan in a single layer, stirring them to ensure they are covered with the oil. Position the pan on the top oven rack and roast the seeds until they start to turn golden brown. This could take anywhere from 5 to 20 minutes, depending on their size—smaller seeds may be ready in about 5 minutes, while larger ones might take up to 20 minutes. Keep a close watch to avoid burning. Once they are lightly browned, take the pan out of the oven and let it rest on a cooling rack. Allow the seeds to cool completely before consuming.
