Roasted Tomato Basil Soup

Description

A comforting bowl of roasted tomato basil soup that brings warmth and flavor to any meal.


Ingredients

  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh thyme (minced)
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 28 oz. can San Marzano tomatoes (crushed)
  • 1 cup fresh basil (roughly chopped)
  • 1 tbsp sugar
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat your oven to 375°F.
  2. Spread the sliced Roma tomatoes on a baking sheet. Drizzle with olive oil, then sprinkle with salt and black pepper.
  3. Roast the tomatoes for 1 hour. Remove from the oven and set aside.
  4. In a large pot (or Dutch oven), heat 2 tablespoons of olive oil or butter over medium-high heat.
  5. Add the diced onion and sauté for about 5 minutes until it softens.
  6. Stir in the minced garlic, fresh thyme, salt, and black pepper. Sauté for another minute until fragrant.
  7. Add crushed San Marzano tomatoes, chopped basil, and sugar to the pot. Lower the heat and simmer for about 10 minutes.
  8. Carefully add the roasted tomatoes and chicken stock to the pot. Allow it to simmer for 30 minutes, stirring occasionally.
  9. Use an immersion blender to purée the soup until smooth, or carefully transfer in batches to a blender.
  10. Return the soup to the pot and stir in heavy cream.
  11. For the mini croutons, cut small cubes of bread, drizzle with oil, and mix in diced garlic and basil. Bake at 400°F for about 7 minutes.
  12. Add croutons to the top of the served soup. Serve at once!

Notes

For a chunkier soup, reserve some roasted tomatoes before blending. Top with croutons and a drizzle of olive oil for added texture.
