  • 1 ½ cups long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • ½ cup crushed crackers (such as Ritz, optional)
  • 2 tablespoons melted butter (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease the baking dish.
  2. Shred the rotisserie chicken, setting it aside for later use.
  3. Combine the cream of chicken soup, sour cream, chicken broth, garlic powder, diced onion, dried thyme, salt, and pepper in a large bowl. Stir until everything blends smoothly.
  4. Incorporate the uncooked rice into the bowl, ensuring it gets coated in the sauce mixture.
  5. Add the shredded chicken, stirring until evenly distributed.
  6. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  7. Cover the dish with aluminum foil and place it in the preheated oven. Bake for 45 minutes.
  8. Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Mix crushed crackers with melted butter and sprinkle over the casserole. Return to the oven for another 5 minutes until golden brown.
  10. Allow the casserole to rest for 5-10 minutes before serving and garnish with fresh parsley.

Notes

For a crispy topping, add crushed crackers mixed with melted butter. Experiment with spices for added flavor.
