- 1 rotisserie chicken, shredded
- 2 cups cooked rice
- 1 cup frozen mixed vegetables
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 2 tablespoons butter, melted
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded rotisserie chicken, cooked rice, frozen mixed vegetables, cream of chicken soup, sour cream, and half of the shredded cheddar cheese. Season with salt and pepper.
- Pour the mixture into a greased baking dish.
- In a separate bowl, mix the breadcrumbs with the melted butter. Sprinkle the breadcrumb mixture over the casserole, then top with the remaining cheddar cheese.
- Bake for 25-30 minutes, or until bubbling and golden on top.
- Let it cool for a few minutes before serving.
Notes
Add fresh herbs like parsley or thyme before baking for extra flavor. For a spicier twist, include diced jalapeños or hot sauce.
