Ingredients

  • 1 rotisserie chicken, shredded
  • 2 cups cooked rice
  • 1 cup frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded rotisserie chicken, cooked rice, frozen mixed vegetables, cream of chicken soup, sour cream, and half of the shredded cheddar cheese. Season with salt and pepper.
  3. Pour the mixture into a greased baking dish.
  4. In a separate bowl, mix the breadcrumbs with the melted butter. Sprinkle the breadcrumb mixture over the casserole, then top with the remaining cheddar cheese.
  5. Bake for 25-30 minutes, or until bubbling and golden on top.
  6. Let it cool for a few minutes before serving.

Add fresh herbs like parsley or thyme before baking for extra flavor. For a spicier twist, include diced jalapeños or hot sauce.
