  • 2 cups rotisserie chicken (shredded)
  • 8 oz pasta (farfalle or your choice)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup cherry tomatoes (halved)
  • 1 cup spinach (fresh)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil (for garnish)

Instructions

  1. Boil pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the heavy cream and chicken broth, bringing to a simmer. Add cherry tomatoes and spinach, cooking until spinach is wilted.
  4. Stir in shredded rotisserie chicken and Parmesan cheese, mixing until the cheese melts and the sauce is creamy.
  5. Add cooked pasta to the skillet, tossing to coat everything evenly. Season with salt and pepper to taste.
  6. Garnish with fresh basil and additional Parmesan cheese, if desired.
