- 2 cups shredded rotisserie chicken (skin removed)
- 1 tablespoon olive oil
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 1 cup frozen peas and carrots mix
- 1/2 cup corn (optional)
- 1 tablespoon all-purpose flour
- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- Salt and black pepper (to taste)
- 1/2 teaspoon dried thyme
- 3 large Yukon Gold potatoes (peeled and cubed)
- 1/3 cup milk
- 2 tablespoons butter
- Salt (to taste)
- Optional: 1/4 cup shredded cheddar cheese (for extra richness)
Instructions
- Prep the Potatoes: Boil the cubed Yukon Gold potatoes in a large pot of salted water for about 15 to 20 minutes, or until tender. Drain and return them to the pot.
- Make the Filling: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion turns translucent and fragrant.
- Add the Chicken: Stir in the shredded rotisserie chicken followed by the frozen peas and carrots mix. If you’re including corn, add that in too.
- Make it Saucy: Sprinkle 1 tablespoon of flour over the chicken mixture, stirring to combine. Slowly pour in 1 cup of chicken broth and stir continuously. Add in 1 tablespoon of Worcestershire sauce, 1/2 teaspoon of dried thyme, salt, and pepper to taste. Let it simmer for about 5-7 minutes until the mixture thickens.
- Assemble: Preheat your oven to 400°F. Transfer the chicken filling to a baking dish. Prepare the mashed potatoes by mashing the boiled Yukon Gold potatoes with 1/3 cup of milk, 2 tablespoons of butter, and salt to taste. Spread the mashed potato mixture across the chicken filling, smoothing it out with a spatula.
- Bake: For an optional cheesy touch, sprinkle 1/4 cup of shredded cheddar cheese over the mashed potatoes. Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbling.
- Serve & Enjoy: Allow the Shepherd’s Pie to cool slightly before serving. Enjoy the comforting flavors and delightful textures with family and friends.
