- 1 spaghetti squash
- 1 pound Italian sausage
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
Instructions
- Set your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Place the squash cut-side down on a baking sheet and bake for 30-40 minutes until tender.
- Heat a large skillet over medium heat and add the Italian sausage.
- Cook until browned, stirring occasionally.
- Add diced onions and bell peppers into the skillet and sauté until softened.
- Stir in minced garlic, marinara sauce, Italian seasoning, salt, and pepper; cook for an additional 5 minutes.
- Scrape the flesh of the cooked spaghetti squash with a fork to create strands.
- Combine the squash strands with the sausage and pepper mixture in a large mixing bowl.
- Transfer to a baking dish and top with shredded mozzarella cheese.
- Bake for another 15 minutes until the cheese is bubbly and golden.
Notes
For enhanced flavor, consider adding mushrooms or zucchini and experimenting with different cheeses.
