Ingredients

  • 1 spaghetti squash
  • 1 pound Italian sausage
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Set your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Place the squash cut-side down on a baking sheet and bake for 30-40 minutes until tender.
  4. Heat a large skillet over medium heat and add the Italian sausage.
  5. Cook until browned, stirring occasionally.
  6. Add diced onions and bell peppers into the skillet and sauté until softened.
  7. Stir in minced garlic, marinara sauce, Italian seasoning, salt, and pepper; cook for an additional 5 minutes.
  8. Scrape the flesh of the cooked spaghetti squash with a fork to create strands.
  9. Combine the squash strands with the sausage and pepper mixture in a large mixing bowl.
  10. Transfer to a baking dish and top with shredded mozzarella cheese.
  11. Bake for another 15 minutes until the cheese is bubbly and golden.

Notes

For enhanced flavor, consider adding mushrooms or zucchini and experimenting with different cheeses.
