Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onions and sauté until they start to soften, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms, cooking for another 2-3 minutes until mushrooms are tender.
- Stir in the sliced zucchini and thyme, cooking until the zucchini is tender but still vibrant, about 5-7 minutes.
- Season with salt and pepper to taste.
