- 1/2 tsp chili powder (optional)
- 1–2 tbsp avocado oil
- 8–10 corn tortillas
- 1/2 small onion, finely chopped
- Fresh cilantro, chopped
- Salsa of your choice
- Lime wedges for serving
Instructions
- Shred the king oyster mushrooms into bite-sized pieces.
- Combine dark soy sauce, garlic powder, cumin powder, onion powder, black pepper, and chili powder in a bowl.
- Whisk everything until well combined to create a savory blend.
- Heat avocado oil in a pan over medium-high heat, then add the shredded mushrooms.
- Sauté for about 5-6 minutes until golden.
- Pour the spice blend into the pan and coat the mushrooms evenly.
- Warm corn tortillas on a skillet until soft and pliable.
- Assemble your tacos with the mushroom mixture, chopped onions, fresh cilantro, and salsa.
- Serve with lime wedges on the side.
