  • 12 tbsp avocado oil
  • 810 corn tortillas
  • 1/2 small onion, finely chopped
  • Fresh cilantro, chopped
  • Salsa of your choice
  • Lime wedges for serving

Instructions

  1. Shred the king oyster mushrooms into bite-sized pieces.
  2. Combine dark soy sauce, garlic powder, cumin powder, onion powder, black pepper, and chili powder in a bowl.
  3. Whisk everything until well combined to create a savory blend.
  4. Heat avocado oil in a pan over medium-high heat, then add the shredded mushrooms.
  5. Sauté for about 5-6 minutes until golden.
  6. Pour the spice blend into the pan and coat the mushrooms evenly.
  7. Warm corn tortillas on a skillet until soft and pliable.
  8. Assemble your tacos with the mushroom mixture, chopped onions, fresh cilantro, and salsa.
  9. Serve with lime wedges on the side.
