Description

A vibrant Korean BBQ dish using leftover rotisserie chicken, balanced with the heat of gochujang and sweetness of honey.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons gochujang (Korean chili paste)
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Shred the leftover rotisserie chicken into bite-sized pieces and set aside.
  2. In a bowl, whisk together the soy sauce, honey, gochujang, minced garlic, and sesame oil until smooth.
  3. Toss the shredded chicken in the marinade until well coated and let it sit for about 10 minutes.
  4. In a skillet over medium heat, add the marinated chicken along with all the marinade. Cook for 5-7 minutes until heated through.
  5. Serve hot, garnished with sliced green onions and toasted sesame seeds.

Notes

For extra flavor, add a splash of lime juice before serving. Adjust gochujang for more heat as desired.
