  • Blueberries, 1 cup (240 ml) (150 grams)
  • Maple syrup, 2 tablespoons (30 ml) (30 milliliters)
  • Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
  • Ghee, 2 tablespoons (30 ml) (28 grams)
  • Vegetable broth, 1/2 cup (120 ml) (120 milliliters)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the venison tenderloin with salt and black pepper on all sides.
  3. Heat olive oil in a large ovenproof skillet over medium-high heat.
  4. Add the venison to the skillet and sear for 2-3 minutes on each side until browned.
  5. Remove the venison from the skillet and set aside.
  6. In the same skillet, add chopped rosemary, thyme, and minced garlic.
  7. Sauté for 1 minute until fragrant.
  8. Add blueberries, honey, and lemon juice to the skillet.
  9. Stir well and cook for 2-3 minutes until the blueberries begin to soften.
  10. Pour in the chicken broth and bring the mixture to a simmer.
  11. Return the venison to the skillet, coating it with the blueberry sauce.
  12. Transfer the skillet to the preheated oven.
  13. Roast for 10-15 minutes or until the venison reaches desired doneness.
  14. Remove the skillet from the oven and transfer the venison to a cutting board.
  15. Let the venison rest for 5 minutes before slicing.
  16. Meanwhile, return the skillet to medium heat on the stove.
  17. Add butter to the blueberry sauce and stir until melted and glossy.
  18. Slice the venison tenderloin and serve with the blueberry sauce drizzled over.
