- 1 Tbsp chili powder (15 ml)
- 1/2 Tbsp paprika (7.5 ml)
- 1/2 tsp onion powder (2.5 g)
- 1/4 tsp garlic powder (1.25 g)
- 1/4 tsp ground coriander (1.25 g)
- 1/8 tsp ground turmeric (0.6 g)
- 1 tsp brown sugar (5 g)
- 1/2 tsp sea salt (2.5 g)
- 2 small yellow onions (or one large, 225 g)
- 3 bell peppers, any color (360 g)
- 1 lb. chicken breast (450 g)
- 2 Tbsp vegetable oil (30 ml)
- 1 lime (25 g)
- 8 6-inch tortillas (20 cm, 200 g)
- 1/2 cup plain yogurt (optional, 120 ml)
- 1/4 bunch cilantro (optional, 12.5 g)
Instructions
- Warm up your oven to 400°F. Combine all the spices (chili powder, paprika, onion powder, garlic powder, coriander, turmeric, brown sugar, and sea salt) in a small dish and keep them aside.
- Slice the onions and bell peppers into strips about 1/4-inch wide. Cut the chicken breast into thin slices as well. Place both the chicken and vegetables on a sizeable baking sheet or in a casserole dish.
- Pour the vegetable oil over the chicken and vegetables, then scatter the prepared spice mix on top. Use your hands to mix everything until the ingredients are well covered with oil and spices. Arrange the chicken and vegetables evenly across the baking sheet.
- Cook the chicken and vegetables in the oven for 35-40 minutes, making sure to stir them once halfway through the cooking time. Once done, squeeze the juice from half of the lime over the chicken and vegetables.
- For serving, place a portion of the chicken and veggies in the middle of each tortilla. Add a few sprigs of cilantro, a spoonful of yogurt, and an extra squeeze of lime if you like.
