  • 1 pound (454 g) large shrimp, deveined and deshelled
  • 1 pound (454 g) asparagus, 1 1/2 inch diagonal cut and bottom 1 inch removed and discarded
  • 1 1/2 tablespoons (22 ml) ginger, minced
  • 1 1/2 tablespoons (22 ml) garlic, minced
  • 1/4 teaspoon (1.25 ml) red chili flakes
  • 1/4 teaspoon (1.25 ml) salt, plus more to taste
  • 1 tablespoon (15 ml) plus 1 teaspoon soy sauce
  • 1/4 cup (60 ml) water
  • Jasmine rice

Instructions

  1. In a wok or frying pan on medium-high flame, pour in 1¼ tablespoons of vegetable oil and stir in the garlic for a minute.
  2. Introduce the shrimp, red chili flakes, and a pinch of salt. Sauté until the shrimp turns pink, roughly 2-3 minutes, without fully cooking them. Transfer the shrimp and garlic to a separate bowl and set it aside.
  3. Using the same heat, add the remaining 1¼ tablespoons of vegetable oil and the ginger to the wok. Cook for another minute before incorporating the asparagus. Stir continuously for about 2 minutes.
  4. Reintroduce the shrimp mixture back into the wok and continue cooking for another 2 minutes.
  5. Pour in the soy sauce and ¼ cup of water. Allow the liquid to cook down slightly. Check the asparagus for a tender-crisp texture, avoiding any mushiness.
  6. Serve promptly alongside jasmine rice and enjoy.
