- 2 1/2 tablespoons (37 ml) vegetable oil, split
- 1 pound (454 g) large shrimp, deveined and deshelled
- 1 pound (454 g) asparagus, 1 1/2 inch diagonal cut and bottom 1 inch removed and discarded
- 1 1/2 tablespoons (22 ml) ginger, minced
- 1 1/2 tablespoons (22 ml) garlic, minced
- 1/4 teaspoon (1.25 ml) red chili flakes
- 1/4 teaspoon (1.25 ml) salt, plus more to taste
- 1 tablespoon (15 ml) plus 1 teaspoon soy sauce
- 1/4 cup (60 ml) water
- Jasmine rice
Instructions
- In a wok or frying pan on medium-high flame, pour in 1¼ tablespoons of vegetable oil and stir in the garlic for a minute.
- Introduce the shrimp, red chili flakes, and a pinch of salt. Sauté until the shrimp turns pink, roughly 2-3 minutes, without fully cooking them. Transfer the shrimp and garlic to a separate bowl and set it aside.
- Using the same heat, add the remaining 1¼ tablespoons of vegetable oil and the ginger to the wok. Cook for another minute before incorporating the asparagus. Stir continuously for about 2 minutes.
- Reintroduce the shrimp mixture back into the wok and continue cooking for another 2 minutes.
- Pour in the soy sauce and ¼ cup of water. Allow the liquid to cook down slightly. Check the asparagus for a tender-crisp texture, avoiding any mushiness.
- Serve promptly alongside jasmine rice and enjoy.
