Ingredients

  • – 450 g catfish fillets (1 lb)
  • – 450 g shrimp, deveined and peeled (1 lb)
  • – 3 tbsp (45 ml). Creole seasoning
  • – 2 tbsp (30 ml). olive oil
  • – 1 green bell pepper, diced
  • – 1 yellow onion, diced
  • – 2 cans (400 g each) whole tomatoes
  • – 1 can (200 g) tomato paste
  • – 180 ml chicken broth
  • – 5 ml red pepper
  • – salt & pepper, to taste
  • – Sliced green onions, hot sauce for serving
  • – Cooked rice or cauliflower rice, for serving

Instructions

  1. Coat the catfish fillets thoroughly with two tablespoons of Creole seasoning. In a large pot or Dutch oven, heat one tablespoon of oil. Place the catfish fillets in the pot and cook until they are easily flaked with a fork but still firm, approximately 2 minutes on each side. Transfer to a plate to cool slightly, then cut into small pieces. While the fish cools, in a separate bowl, toss the shrimp with the remaining Creole seasoning. Set this aside.
  2. In the same pot, heat the rest of the oil. Add the diced bell pepper and onion, sautéing until they soften, which should take around 3-4 minutes. Incorporate the tomato paste, stirring until it is evenly blended. Add the canned whole tomatoes, including their juices, followed by the chicken broth. Bring the mixture to a boil.
  3. Lower the heat to maintain a gentle simmer, cover the pot, and let it cook for 25-30 minutes. Add the shrimp, red pepper, and catfish, cover the pot once more, and allow the shrimp to cook until they turn pink, about 10 minutes.
  4. Serve the dish over your choice of rice or cauliflower rice, and garnish with hot sauce and sliced green onions.

Notes

  • Make sure to clean and remove the veins from the shrimp before seasoning with Creole for a better eating experience.
  • Use whole tomatoes with their juices to enhance the dish’s flavors and create a delicious sauce.
