Description

Delicious shrimp stuffed mushrooms filled with a creamy shrimp and cheese mixture, baked to perfection for a flavorful appetizer.


Ingredients

  • 8 ounces peeled & deveined shrimp
  • 8 ounces baby bella mushrooms
  • 3 ounces cream cheese
  • 2 teaspoons mayo
  • 1 tablespoon minced garlic
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon Italian breadcrumbs
  • 1 tablespoon grated Parmesan cheese (optional)
  • 1 tablespoon unsalted butter

Instructions

  1. Clean the mushrooms and remove the stems. Discard the stems.
  2. Preheat the oven to 400℉. Pre-bake the mushrooms upside down for 15 minutes. Allow them to cool after releasing excess water.
  3. Prepare the shrimp by pressing them between paper towels to release excess moisture.
  4. Add oil to a high-heat frying pan and then add shrimp. Season with salt and pepper, cooking until pink; right before they’re done, introduce minced garlic for added flavor.
  5. Allow the shrimp to cool briefly before chopping into small pieces.
  6. Combine the shrimp with cream cheese, mayonnaise, lemon juice, and salt and pepper to taste in a bowl. Ensure the mixture remains creamy and not loose.
  7. Melt 1 tablespoon of butter in a microwave, mixing it with breadcrumbs and Parmesan cheese (if using).
  8. Spoon the shrimp filling into each mushroom, then sprinkle the breadcrumb topping over the filled mushrooms.
  9. Place the mushrooms in the preheated oven for 20 minutes or until the tops turn golden brown.
  10. Remove from the oven and allow to cool before serving.

Notes

For best flavor, use fresh shrimp. Consider adding diced bell peppers or scallions for extra texture and flavor.
