Delicious shrimp stuffed mushrooms filled with a creamy shrimp and cheese mixture, baked to perfection for a flavorful appetizer.

- 8 ounces peeled & deveined shrimp
- 8 ounces baby bella mushrooms
- 3 ounces cream cheese
- 2 teaspoons mayo
- 1 tablespoon minced garlic
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 1 tablespoon Italian breadcrumbs
- 1 tablespoon grated Parmesan cheese (optional)
- 1 tablespoon unsalted butter
Instructions
- Clean the mushrooms and remove the stems. Discard the stems.
- Preheat the oven to 400℉. Pre-bake the mushrooms upside down for 15 minutes. Allow them to cool after releasing excess water.
- Prepare the shrimp by pressing them between paper towels to release excess moisture.
- Add oil to a high-heat frying pan and then add shrimp. Season with salt and pepper, cooking until pink; right before they’re done, introduce minced garlic for added flavor.
- Allow the shrimp to cool briefly before chopping into small pieces.
- Combine the shrimp with cream cheese, mayonnaise, lemon juice, and salt and pepper to taste in a bowl. Ensure the mixture remains creamy and not loose.
- Melt 1 tablespoon of butter in a microwave, mixing it with breadcrumbs and Parmesan cheese (if using).
- Spoon the shrimp filling into each mushroom, then sprinkle the breadcrumb topping over the filled mushrooms.
- Place the mushrooms in the preheated oven for 20 minutes or until the tops turn golden brown.
- Remove from the oven and allow to cool before serving.
Notes
For best flavor, use fresh shrimp. Consider adding diced bell peppers or scallions for extra texture and flavor.
